Gluten-Free Chocolate Fondant


  • ¼ cup MAC Foods sorghum flour, sifted
  • ½ tsp Xanthan Gum (optional)
  • ½ cup icing sugar, sifted
  • ¾ cup almond meal
  • 2 egg whites
  • 100g butter, melted
  • 160g chocolate, melted (use either dark or milk chocolate – I’m a milk chocolate lover so I use milk chocolate)
  • 4 small squares of chocolate, extra


  1. Preheat oven to 150°C
  2. Place flour, sugar, almond meal, eggwhites, butter and melted chocolate in a bowl and combine well
  3. Spoon half the mixture into 125ml ramekin moulds
  4. Place the extra squares of chocolate into each mould
  5. Spoon in the remaining mixture into the ramekins
  6. Bake for 20-25 minutes or until cook but still soft in the middle
  7. Serve with ice cream, cream or your favourite berries
