Gluten-Free Carrot Cake

Ingredients

Cake

  • 70g MAC Foods White Sorghum Flour
  • 55g Rice Flour
  • 1 tsp Baking Powder
  • 1 tsp Xanthan Gum (optional)
  • ¾ cup of brown sugar
  • 1 tsp of mixed spice
  • 2 eggs lightly beaten
  • 2/3 cups of olive oil
  • 2 cups of carrots, grated
  • ¼ cup of diced walnuts

Icing

  • 125g Cream Cheese
  • 250g pure icing sugar
  • 60g softened butter
  • A few drops of Vanilla Essence

Method

Cake

  1. Preheat oven to 180°C
  2. Mix together, flours, sugar, baking powder and spices
  3. Add oil and eggs and beat in a food processor for 1 minute
  4. Stir in carrot & walnuts
  5. Pour into an 18cm tin and bake for an hour

Icing

  1. Blend cream cheese, sugar and butter in a food processor
  2. Add a few drops of vanilla once combined
  3. Spread over the cake once cake has cooled
